Serves 4-6
Ingredients
- 1 1/2 lbs Butternut Squash*
- 1 1/2 lbs Fresh Apples (your choice), peeled and cut into 2" chunks*
- 1/2 tsp ground ginger
- 1/2 cup apple cider*
- 1/4 tsp nutmeg
- 2 tbsp butter*
- 1/2 cup chopped pecans*
Directions
- Preheat oven to 350*F and butter a 2 quart casserole dish.
- Combine first 4 ingredients in a large saucepan. Simmer 15 minutes or until squash and apples are tender.
- Turn into buttered casserole dish.
- Sprinkle with nutmeg, dot with butter and top with pecans. Bake for 20 minutes.
