Ingredients
- 2 cups chopped apples (your choice)*
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp baking powder
- 1 cup sugar
- 3/4 cup Maple Syrup*
- 2 eggs*
- 1/2 cup vegetable oil**
- 1 cup chopped nuts*
- 2 1/2 cups flour
- 1 1/2 cups confectioners sugar
- 1/2 cup Maple Syrup*
Directions
- Preheat oven to 350*F.
- Whisk together eggs, oil and syrup in a medium bowl. Add remaining ingredients and stir well.
- Pour into greased tube cake pan and sprinkle with half of chopped nuts (1/2 cup). Bake for 45 minutes.
- While the cake is baking, prepare the Maple Glaze by mixing together the confectioner's sugar and maple syrup.
- Remove cake from oven, cool and glaze. Garnish with remaining nuts.
