Apple-Maple Nut Ring with Maple Glaze

To reduce the fat content of this cake, replace half or all of the oil with unsweetened applesauce.


Ingredients
  • 2 cups chopped apples (your choice)*
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp baking powder
  • 1 cup sugar
  • 3/4 cup Maple Syrup*
  • 2 eggs*
  • 1/2 cup vegetable oil**
  • 1 cup chopped nuts*
  • 2 1/2 cups flour
For the Maple Glaze:
  • 1 1/2 cups confectioners sugar
  • 1/2 cup Maple Syrup*

Directions
  1. Preheat oven to 350*F.
  2. Whisk together eggs, oil and syrup in a medium bowl. Add remaining ingredients and stir well.
  3. Pour into greased tube cake pan and sprinkle with half of chopped nuts (1/2 cup). Bake for 45 minutes.
  4. While the cake is baking, prepare the Maple Glaze by mixing together the confectioner's sugar and maple syrup.
  5. Remove cake from oven, cool and glaze. Garnish with remaining nuts.
