Ingredients:
- 4 lbs potatoes (your choice), peeled and cut into quarters*
- 1 bay leaf
- Coarse salt and fresh gound black pepper
- 2 cups heavy cream or milk*
- 3 tbsp butter*
- 2 tbsp chopped fresh chives
Directions:
- Put potatoes in a large pot with enough cold water to cover, add bay leaf, and a dash of salt. Bring to a boil and cook until potatoes are tender, about 20 minutes.
- While potatoes are cooking, in a small saucepan, heat the cream and butter over low heat, stirring constantly.
- When potatoes are tender, drain well. In a large bowl, mash the potatoes, stir in hot cream/butter mixture and season with salt and pepper. Blend in the chives.
