Ingredients
- 3 Nectarines or peaches, divided*
- 2 cups tart cherries, pitted*
- 3 cups cubed cooked chicken
- 1 1/2 cups sliced celery*
- 2 tbsp sliced green onions
- 1 cup light mayonnaise
- 1/4 cup plain lowfat yogurt
- 2 tbsp honey*
- 1 tsp lemon juice*
- 1/4 to 1/2 tsp curry powder
- 1/8 tsp ground ginger
- 1/2 cup slivered toasted almonds, divided*
Directions
- Chop one of the nectarines/peaches; combine with cherries, chicken, celery and onions in a large bowl.
- In a small bowl, combine mayo, yogurt, honey, lemon juice, curry and ginger, mixing well. Pour mayo mixture over chicken mixture; toss to coat.
- Cover and refrigerate until chilled. Just before serving, toss in the almonds. Slice remaining 2 nectarines/peaches; garnish.
